Good weather is approaching, so you want fresh dishes, such as salads or cold soups. Of the latter, gazpacho or salmorejo are typical, but you should know that there are more of them, whatever you want to imagine. An example is this dish with red fruits of the protagonists, a very interesting food because it is rich in antioxidants. Accompanied by smoked salmon tacos, it’s delicious.
Red fruit soup with smoked salmon
300 grams ripe pear tomato
250 grams assorted red fruits
½ small garlic clove
25 grams breadcrumbs from yesterday
50ml olive oil
½ tablespoon sherry vinegar
salt and black pepper
150 grams smoked salmon in tacos
Young shoots for decoration
1. Ingredients cut into medium pieces (reserve red fruit for decoration), except for salmon, vinegar and olive oil, put into a blender bowl. It’s very good to grind everything.
2. Add vinegar and oil and continue beating until well emulsified.
3. Taste and season properly. Leave in the refrigerator until very cold.
4. Serve soup with your favorite dishes. Serve with cubed smoked salmon, reserved red fruit and tender sprouts.
