We’ll show you how to make this homemade vegetable soup, rich in nutrients and super easy to make. Although we offer a list of vegetables, you can add whatever you want.
Ingredients (for 2 servings)
- 1 zucchini (round or zucchini)
- 1 celery stalk
- 1/2 onion
- 1 garlic clove
- 1 cup cauliflower
- 1 cup cabbage
- Salt and pepper
- Optional: 1 vegetable stock cube, toasted nuts, croutons.
Step 1: Wash vegetables well and cut into small pieces.
Step 2: Pour a little olive oil into the pan and fry them. Add the minced garlic clove last so it doesn’t burn.
Step 3: Add the broth dissolved in hot water so that it covers the vegetables. Boil 5 minutes.
Step 4: Mix or whisk the soup, season with salt and pepper and serve. You can add roasted nuts or crackers.
