To complete the dish, some fresh peas are added, taking advantage of the fact that we are now in season and that they are used to include a serving of legumes on the menu that day.
How to make a juicy turkey breast
Small turkey breasts, 2 pieces
Fresh ginger, 4 or 5 slices
Garlic, 2 pcs.
Onion, 1/2 pc.
Laurel, 1 sheet
Fat-free chicken broth, 100 ml
Soy sauce, low salt, 4 tablespoons
Apple cider vinegar, 2 tablespoons
Fresh peas, 400 g
Extra virgin olive oil, 1 tablespoon
Sprinkle some salt and pepper on turkey breast and mark in a pan until golden brown on both sides, then reserve.
In the same pan with a tablespoon of oil, saute the ginger, minced garlic cloves and chopped onion with bay leaf. We also add a little fat-free chicken broth (as pure as possible), let it boil down and add low-salt soy sauce and a little apple cider vinegar.
We are adding turkey breast in the broth and cook them in the sauce for 6 minutes, depending on the thickness of the breast. Strain the sauce and reserve.
While the turkey breasts are cooking, we take the opportunity to peel peas cool and reserve. When we take out the breasts, add peas to the pan and cook it a little with strained sauce.
