The gazpacho soup recipe from Food Network star Sunny Anderson hits the spot as the weather gets warmer.
Spicy and bright, this is a refreshing dish that is likely to have a permanent place on your spring and summer lunch menu.
Anderson says her gazpacho recipe is perfect when you have a lot of zucchini.
co-host Kitchen says that zucchini, due to its high water content, is the perfect vegetable for this dish.
“I feel like ever since I started gardening outdoors, I’ll be getting these DMs from people like, ‘What do you do with excess squash?’ Because zucchini can grow like weeds,” he told Rachel Ray on Ray’s daytime show (video below).
“I mean they are full of water; that’s why it also looks like a very healthy soup. And if you water them properly, they will swell overnight.”
In addition to zucchini, Anderson also uses for vegetables in this recipe “sour and spicy” green onions and tomatoes. “Obviously it’s going to be a good green gazpacho,” Anderson added.
the soup itself ask for plain Greek yogurt, fresh basil leaves, unpeeled kirby or English cucumber, garlic, lemon and, of course, salt and pepper.
The plate is completed garnish honey and Greek yogurt.

Refreshing gazpacho from Sunny Anderson is prepared almost instantly.
A chef’s twist on the classic Spanish soup, served cold first, consists of grilled zucchini, onions, and tomatoes, giving the dish a nice smoky flavor. The vegetables are then mixed with raw garlic.
“I think a lot of people are offended by raw garlic,” he told Ray, “but I think a little heat from the grill will mix it up.”
English cucumbers, fresh basil leaves and yogurt also go into the blender: “I have been replacing sour cream with Greek yogurt for a long time and I really like it. You can make it whole or fat free.”
Once the mixture is fully mixed and homogeneous, it is ready to be chilled. “See how easy it is? Very very beautiful”.
As a fun and playful serving idea, Anderson suggested that if “you have a nice little spring evening, you could pour it into shot glasses.”
Ray added: “If you chill the cups and put them on the party, what a refreshing and delicious snack, you know? This is an appetizer.
